Meal Plan Monday 1024x441 Paleo Meal Plan Monday   June 3rdI can’t believe the year is already halfway over. Where the heck has the time gone?

Summer is now officially in full swing. Our pool is now open and school is out. Meaning I must brave the grocery store with my daughter and son in tow. Today was the first time in a long time I have had to tote both of them along and although I would call it successful, it was still exhausting. I ended up having to pick up my son’s shoe and put it back on him 3 time before I gave up, put it my purse and let his feet dangle bare piggied from his seat in the shopping cart. I had to field requests for pepperoni, balloons and gum but successfully only left with gum. All of this was done while pushing one of those 2 ton shopping carts with the car attached. Surprisingly, I only ran into something twice, and only knocked stuff down once. So it was definitely an exhausting trip, but we are all set for a week of healthy paleo eating.

Breakfast-

Lunches-

  • Broiled fish with steamed veggies
  • “Cobb” Salad with bacon, hard-boiled eggs, and nuts
  • Salad topped and london broil strips
  • Tuna Fish Patties

Dinners

  • Monday- Spicy chicken drumsticks with steamed veggies
  • Tuesday- Spaghetti squash in meat sauce
  • Wednesday-  Lemon dill cod fillets, roasted butternut squash, salad, grilled squash boats
  • Thursday-  Ginger glazed mahi mahi (I will be adapting this recipe to make it paleo) with stir fry veggies
  • Friday- Peachy pork chops more steamed veggies and sweet potato
  • Saturday- Stir fry
  • Sunday- Ham, salad, green beans, sweet potatoes
